It has not enough buttons.

^ Actually there is enough buttons

A Wiimote has a D-Pad and 7 buttons. A PSX controller (non-Dualshock) has a D-Pad and 10 buttons. So no, a Wiimote does not have enough.
But if you have a classic controller, you could always use GlovePIE (http://glovepie.org/glovepie.php). I've had good results with it. Use this script I wrote in 2010:
// Final Fantasy VII script, by Covarr
NumPad8 = Classic.Up
NumPad2 = Classic.Down
NumPad4 = Classic.Left
NumPad6 = Classic.Right
NumPadEnter = Classic.a
NumPadPlus = Classic.x
NumPad0 = Classic.b
NumPadDot = Classic.y
NumPad9 = Classic.L
NumPad3 = Classic.R
NumPad7 = Classic.ZL
NumPad1 = Classic.ZR
NumPad5 = Classic.Start
NumPadMinus = Classic.Select
Ctrl + Q = Classic.Home

The best way to play is, obviously, the PS3 pad. Gives you that nice PSX feeling. :)
