PC Gamer has this sweet retrospective on the PC port of FF7 and its development. It doesn't go into too much detail, but it's a fun read.

Nothing really new, except that the team were located in California. I remember that a qGears document said it was done by the team in Honolulu. Nevertheless, yes the mouth texture is present on the psx models and I also read in an interview (why the decision for chibi models) that they actually wanted to show some emotional expressions on the faces of the models. (Did somebody noticed the Cloud makes a ;) face to Aerith, before he goes into the Honeybee?)

Very interesting. Too sad the 3D Artist could not do more on the PC port.
