is there a way to fight emerald/diamon/ruby etc again?

Are you asking about vanilla FF7, or are you asking if repeat battles can be implemented in a mod?

Save before you defeat them, beat them, load your save, repeat until desired effect is achieved.

There is a tool called "Teleporter And Instant Battle Trainer " that allows you to encounter enemy's by entering there values into the boxes provided, you can get it here

that will allow you to battle emerald/diamond/ruby again if you want to.

Also

1.  You can make a scene where WEAPONS appear as random battles. (if you ask, someone can tell you how)

2.  Use a code to make them appear at will.

this is something i will add in to Black Chocobo. if you want to send me a save where you are up to emerald/ruby and have not fought them yet. if i can find the flag(s) i will add it for 1.9.
