So, I recently found out about the whole modding community and I never knew it was so vast and great.
Anyway, I'm playing the hardcore remix mod for FF7, and I've been looking for differences between the original and the hardcore mod. I've Googled it several times, but all I was able to find was Youtube videos and message boards with no real answers to my question.
Anyone have a link that has the list of changes made to the hardcore version? Also, anyone know how I can edit monster and boss stats in the game? I've seen a few videos where the player changed the stats for monsters (that big snake with "Beta" Enemy Skill).

I believe there is a tab on the installer that contains the features/changelog. Scrolling through that should give you a pretty good idea of what has changed.

Don't use the Remix. Use Bootleg (http://www.forums.qhimm.com/index.php?topic=12008.0) instead.
Use Prould Clod to edit stats. Look in the Tools subforum.

I have a related question. I noticed in the BootLoader, where you can select difficulty mods, there is Gjoerulv's Hardcore mod and also one called "FF7 Remix". I was under the impression that the Remix is a collection of mods which includes Gjoerulv's Hardcore mod, so wouldn't those options kinda be the same? Or does it have additional gameplay changes?

Bootleg only uses a few pieces of the outdated Remix mod.
Bootleg installs the 1.05 version of Hardcore.
There is another option to use the Remastered difficulty mod from the Remix.
Hardcore and Remastered don't work together.
Bootleg also integrates Hardcore and Revival if you so choose.
The main point is that the Remix is very outdated.
