A user on forums.PCSX2.net has found a way to patch FF7 to make it truely widescreen (hor+ not vert- i might add) working on either getting the info for you guys or just the patch it's self, as well as the permission to use it, But i thought i'd let you all know :D

Over on the forum they are making widescreen hacks for PS2 games, and a user named Asmodean applied it to the PC versions of FF7 and FF8, and it worked.

This does sound interesting, i remember finding a few values related to the resolution a long time ago but i never did much with them (back when i was trying to remove the black bar at the bottom of the screen),
02FA32D6 and 02FA32DA allow you to manipulate the screen horizontal and vertical
1008AE7C changes character and walkpath size
052511C2 and 052511C6 changes background offset so you can move the background left and right.
But i would like to see his widescreen hack, let us know of his reply.

am pretty sure you change it by editing the ff7_openlg.cfg file and turning off preserve aspect and ps2 have a built in widescreen function anyway

:-o I've been looking for shifting the fields screen vertically (and center it) but I can't find the value in the ff7.exe 1.02. Can someone give me a hand?

Imagine Square fixed the Widescreen issue when they port the FFVII PC Port to PS4
It can't be done unless they have the source code, and even then it can't really be done. The game was designed for 320 *224 resolution. It isn't widescreen right from the fundamentals of the design and code. It just isn't happening. It's also hard just to centre the field screen (because then you also need to edit all the pointers so all the NPC / characters/ items use the correct coordinates.
"Widescreen" would also mean jack shit when your field resolution is so low. You cannot take the original backgrounds and make them widescreen. Even if you did, you'd get unwanted side effects because the game wasn't designed for it. Basically: Forget widescreen with FF8 1998. It's very unlikely to happen but luckily it's an addition that isn't needed.
