I beat FF7 about 5 times (okay, it was 3, and 5 years ago), but I decided to play it again, and I downloaded the Jenova editor to have some fun. I edited my characters, but now, when it gets to the Nibelheim part with Sephiroth, when you fight that first Dragon, instead of Sephiroth killing it in one hit, he misses every single slash!

A very common bug.
You either *****ed with sephiroth's agility somehow or something else.
Just attack it with Cloud, sinse sephy revives you if/when you die.
You have to kill it with cloud.
It will take some time, but you'll do it eventually.

I didn't touch Sephi, he's still got his original stats...
Anyway, Cloud misses every stroke, too. I then tried to kill it with damaging items, and it seemed to work, except that when I entered a battle in Mt. Nibel, the game crashed.
EDIT: Even if I put both their stats all the way up, they both miss.

No, this didn't just happen because you used Jenova. I received this glitch once and I never use Jenova. It's because Sephiroth doesn't have a sword equipped for some reason.
To fix it, use Jenova and throw some Stardusts into your inventory. It seems, though, you've figured this out.

But how would that cause the game to crash?
Modify: Never mind, I just used Jenova to equip a weapon to both people, and it worked.

yea, i had the glitch and couldn't figure it out. so i got a save state at the next save point and i used jenova to get back all my stats (except for clouds...or anybody's for that matter, those don't like changing)

use the CHE file.
It's the FF7 char edit that isn't Jenova.
The Icon is a masamune.
