When i was playing the PS1 version (back when the game came out), i had this:
Window color (http://www.btinternet.com/~rpg_ash/ff7/ff7_window_color.html) (maybe a bit OTT? :-P )
Clockwise from top left [R,G,B] : [0,0,255] [0,255,0] [255,255,0] [255,0,0]
Now that i have it on the PC i'm just using the default color.
(i'm new to these forums, but thanks to some fantastic stickies and users, i'm now playing FF7 on my PC. THANKS!)

Welcome to the forum! :-)
I had mine a mint colour fading into white in a horizontal gradient :-P
-
I experimented with having it pure white, but FF7 doesn't seem to have any compensation for the text color. Now I mostly keep it at a gradient similar to the default but darker and a little more green.

176 blue all the way baby

All black, with either blue or red in the bottom left corner.
-
Red at the top, fading to orange at the bottom.
-
Teal in the upper left corner aqua in the upper right fading to burnt umber to the left and currelean blue on the right.
:D

Light green in upper left corner transending into dark green at the beneath right corner.

That one sounds cool.

Mine was the same number as the default number but i did it on red.

I experiment a bit but always end up having it very pastel. It usually hurts my eyes...
