If I wanted to fight him (I have my reasons) would all I need to do is copy his character AI into an empty AI?

Fight him? Are you daft? I'm pretty sure he's invincible.

I'm not so sure player AI and enemy AI are handled the same. At the very least, you'd need to modify it so he's not constantly healing your team.

Well, the targetting system is 'smart' enough to interpret all commands relative to the battle object. So, "Heal a friendly with less than 128/256 HP" won't start buffing Cloud. There are some issues, though. One is that Sephiroth's AI locks his HP and MP, and the other is that telling an enemy 'use <Command One> - <Cut>' won't work because they can't use the player's bank of basic ('yellow') commands. You'd have to create a similar enemy attack instead.
