Well, with some time today, I've decided to play with the settings of Section 2 (3D Camera) in FF7's field files.
Here's a screenshot of what I accidentally did.

That's great! Now if you can get a "Fish-eye" look and an upwards angle from the same scene, you'd about have it figured out!

Ok, before I go any further, I need everyone's opinion of this.
I've provided some links to the screenshots I made after changing some of the variables for the 3D Camera.
The values are shown at the bottom right of each picture.

The following 3 pictures show the depth variable, or at least what I think is the depth variable.
Please take some time to look at the 3 pictures and tell if I'm right or wrong, whichever the case

The following are variables of unknown purpose. They're not really unknown, I know the affect the angle of the
3D Camera, but which angle I'm not sure. I need you guys to look at the pictures below and tell me what you think this variable changes.

Please remember to ignore the background because it isn't affected by the 3D Camera because it's 2D
Use the exit arrows, to figure out the 3D Camera angle.
Cloud is not in the same position in every picture, I've just moved him into the screen so that one can see the Cloud model.

What you should do is mark out a walking area for all the cameria angles. Using the enterance/exit arrows only gives me a 2d line to mesure distance. The cloud helps, but not as a vector refrence because you move him. I simply have too little visual data. By having the walking borders I can simulate the rotation in another 3d program and see what changed. I hope I'm clear.

The "Depth" appears to be your lens focal length of the camera. This determines if the "lens" is telephoto, or a wide-angle lense. If you could move the camera close and lower the focal length real low, we might be able to see a "fish-eye" appearance of Cloud.

It appears that the 2nd variable also deals with the focal length, although I can-not be sure about that.

halkun is right. We need a stable, unmoving point of referance to figure out what effects are happening. Not moving Cloud would be it. Moving Cloud DOES mess up our attempts to discover what's happening.

both of them look like it scales those exit points, and center would be somewhere in middle of left edge of screen.

Try some screen with more exit points.

You have to remember that panning the camera makes certain objects nearer and others further from the camera, so it might not be what you think.

oh, one of those could change the distance of some of the exits then, (i.e. when cloud is running across a bridge, the exit on the other side is smaller)

maybe it is scaled to a center of area ... that area is not only one screen in size, isn't it ?
